Processing: Cold Soul Wine has its genesis in the double fermentation method, which sees the coffee cherries soaked in cold water overnight, then processed as a natural coffee. This slows down fermentation enabling the development of a unique flavour profile.

In 2004 the Saldanha family acquired the farm Fazenda California. Their objective was to create a platform for the production of specialty coffee. The unique processing method uses Luiz’s knowledge as a certified Q processing instructor to deliver a flavour profile not usually found in Brazilian coffees.
